Eggs Benedict

Ingredients:

  • 4 egg yolks
  • 3 1/2 tablespoons lemon juice
  • 1 pinch ground white pepper
  • 1/8 teaspoon Worcestershire sauce
  • 1 tablespoon water
  • 1 cup butter, melted
  • 1/4 teaspoon salt
  • 8 eggs
  • 1 teaspoon distilled white vinegar
  • 8 strips Canadian-style bacon
  • 4 English muffins, split
  • 2 tablespoons butter, softened

Directions:

  1. Hollandaise Sauce: Fill the bottom of a double boiler part-way with water and bring to a gentle simmer. In top boiler, whisk together egg yolks, lemon juice, white pepper, Worcestershire sauce, and 1 tablespoon water.
  2. Add the melted butter to egg yolk mixture. If hollandaise begins to get too thick, add a teaspoon or two of hot water. Continue whisking until all butter is incorporated. Whisk in salt, then remove from heat. Place a lid on pan to keep sauce warm.
  3. Poached Eggs: Fill a large saucepan with 3 inches of water. Bring water to a simmer/boil, then add vinegar. Carefully break eggs into water, and allow to cook for 2 1/2 to 3 minutes.
  4. While eggs are poaching, brown the bacon and toast the English muffins.
  5. Spread toasted muffins with softened butter, and top each one with a slice of bacon, followed by one poached egg. Place 2 muffins on each plate and drizzle with hollandaise sauce. Optional: sprinkle with chopped chives

Banana Chocolate Chip Cake

Ingredients:

  • 1/2 cup vegetable oil
  • 1 1/3 cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 2 cups flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 3/4 tsp salt
  • 1/2 cup sourmilk (mix regular milk with a little bit of vinegar and let it sit for a few minutes to make it sour)
  • 2 large bananas (or 3 smaller ones)
  • 1 1/2 cups of chocolate chips

Directions:

  1. Preheat the oven to 350.
  2. Mix together all of the wet ingredients.
  3. Mix in the dry ingredients.
  4. Mix in the chocolate chips
  5. Bake for 25 minutes in a greased 9″ x 13″ pan, until light light golden brown – DO NOT OVERCOOK!

Pancakes

Ingredients:

  • 1 cup flour
  • 1 ½ tsp baking powder
  • ½ tsp salt
  • ¼ cup sugar
  • dash of vanilla
  • ¼ cup vegetable oil
  • 1 egg
  • 1 cup milk

Directions:

  1. Mix it all together with love
  2. Make Mickey Mouse shapes and hearts.
  3. Don’t forget the chocolate chips, strawberries, maple syrup, whipped cream, bananas, etc.

Swedish Meatballs

Ingredients:

  • 1 can whole berry cranberry sauce
  • 1 (12 oz) jar chili sauce
  • 2 Tbsp. brown sugar
  • 1 Tbsp. lemon juice
  • 1 (2 or 3 lb.) bag ready-made swedish meatballs
Directions:
  1. Mix the cranberry sauce, chili sauce, brown sugar, and lemon juice together in a bowl.
  2. Pour the sauce over the meatballs in a crock pot.
  3. Heat about 6 hours on LOW, stirring occasionally.
Note: If you do not have a crock pot available, put in a covered container in the oven on 200 for a few hours.

Pumpkin Chocolate Chip Cookies

Ingredients:

  • 1 stick butter
  • ¾ cup sugar
  • ¾ cup brown sugar
  • 1 15oz can of pumpkin
  • 1 tsp vanilla
  • 1 egg
  • 1 tsp cinnamon
  • 1 tsp baking soda
  • 1½ cups oatmeal
  • 1½ cups flour
  • 1½ cups choc chips (semisweet, or whatever you usually like for your cookies)
Directions:
  1. Preheat the oven to 350
  2. Mix the butter, sugar, brown sugar, pumpkin, vanilla, and egg together in a bowl.
  3. Add in the flour, oatmeal, baking soda, and cinnamon.
  4. Mix in the chocolate chips.
  5. Spray pan, roll dough into small patties and place on the pan. (The cookies will not rise or spread out very much on the pan once in the oven, so you can put them fairly close together)
  6. Bake for 12-15 minutes.
