Chicken Tortilla Soup

WORK IN PROGRESS

Ingredients:

  • Black beans
  • Corn
  • Tortilla strips
  • Peppers
  • Onions
  • Chicken breast
  • Chicken broth

Directions:

  1. Dice chicken breast, peppers and onions
  2. Put chicken, corn, peppers and onions into frying pan on medium heat for 15 minutes
  3. After chicken has been cooked fully, mix contents of frying pan with chicken broth
  4. Cook in broth for 1 hour
  5. Let the dog try a little bit to see if its safe to eat or not
  6. If the dog is still alive 24 hours later, EAT… if not, BURY DOG AND THROW AWAY ‘SOUP’

Barbeque Chicken Pizza

Ingredients:

  • Pizza dough
  • Chicken breast
  • 1 Onion
  • 1 Pepper
  • Mozzarella cheese
  • Barbeque sauce
  • Cilantro

Directions:

  1. Preheat oven to 450F
  2. Roll out dough to ~1/2″
  3. Dice ingredients
  4. Spread BBQ sauce as evenly as possible – use roughly 9 oz. for 12″-14″ pizza
    1. Sweet Baby Ray’s Honey Chipotle is a good choice 🙂
  5. Sprinkle ingredients evenly over pizza (generous amounts of onion and pepper for an even, sincle layer of toppings, only a little cilantro on top of cheese for flavor)
  6. Bake for 15-20 mins, until cheese and crust begins to brown

Chicken Pot Pie

Ingredients:

  • 1 small can of Campbell’s Cream of Chicken
  • 1 bag of frozen mixed vegetables (carrots, beans, corn)
  • 16 oz of chicken, either canned or rotisserie
  • 1 pie crust (2 pieces, top and bottom)
  • 1 tsp of salt

Directions:

  1. Heat the oven to 450.
  2. Boil the vegetables in a pot on the stove.
  3. Place the bottom pie crust in the pie pan.
  4. Drain the vegetables. If you are using rotisserie chicken, leave a small amount of water. The canned chicken should have enough in it already. 
  5. Mix in the salt, chicken, and cream of chicken with the vegetables.
  6. Put the mixture into the pie pan.
  7. Put the top pie crust on the pie, and poke holes in it.
  8. Put the pie in the oven for 15 minutes.
  9. Leave it in for another 20-30 minutes at 350. 

All ready to eat!
