Whopper Cookies

Ingredients:
  • 1 cup of butter (2 sticks) softened
  • 3/4 cup brown sugar
  • 1/3 cup sugar
  • 2 eggs
  • 2 tsp vanilla
  • 2 1/4 cup flour
  • 2 tbsp hot cocoa
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 cups of crushed malted milk balls

Directions:

  1. Mix together in a bowl
  2. Roll into balls a place on a greased cookie pan
  3. Bake for 9 minutes at 375

Grandpa’s Peanut Butter Balls

A Christmas tradition
Makes about 120.

Ingredients:

  • 2 sticks of butter
  • 4 cups of crunchy peanut butter
  • 1 1/2 lbs. confectionary sugar (~5 cups)
  • 4 cups of rice krispies (generous)
  • 4-5 cups of chocolate chips
  • 1/2 cup Crisco or 1/3 – 1/2 bar of cooking wax

Directions:

  1. Melt the sticks of butter and the peanut butter and mix them together.
  2. Mix in the confectionary sugar.
  3. Mix in the rice krispies (this will be your arm workout for the day)
  4. Roll this mixture into walnut-sized balls.
  5. Melt the chocolate and crisco in a double broiler (bowl over boiling water on the stove).
  6. Dip the peanut butter balls into the chocolate, and place them on wax paper in the freezer or refrigerator to harden.
  7. Keep refrigerated, and enjoy!

Banana Chocolate Chip Cake

Ingredients:

  • 1/2 cup vegetable oil
  • 1 1/3 cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 2 cups flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 3/4 tsp salt
  • 1/2 cup sourmilk (mix regular milk with a little bit of vinegar and let it sit for a few minutes to make it sour)
  • 2 large bananas (or 3 smaller ones)
  • 1 1/2 cups of chocolate chips

Directions:

  1. Preheat the oven to 350.
  2. Mix together all of the wet ingredients.
  3. Mix in the dry ingredients.
  4. Mix in the chocolate chips
  5. Bake for 25 minutes in a greased 9″ x 13″ pan, until light light golden brown – DO NOT OVERCOOK!

Pumpkin Chocolate Chip Cookies

Ingredients:

  • 1 stick butter
  • ¾ cup sugar
  • ¾ cup brown sugar
  • 1 15oz can of pumpkin
  • 1 tsp vanilla
  • 1 egg
  • 1 tsp cinnamon
  • 1 tsp baking soda
  • 1½ cups oatmeal
  • 1½ cups flour
  • 1½ cups choc chips (semisweet, or whatever you usually like for your cookies)
Directions:
  1. Preheat the oven to 350
  2. Mix the butter, sugar, brown sugar, pumpkin, vanilla, and egg together in a bowl.
  3. Add in the flour, oatmeal, baking soda, and cinnamon.
  4. Mix in the chocolate chips.
  5. Spray pan, roll dough into small patties and place on the pan. (The cookies will not rise or spread out very much on the pan once in the oven, so you can put them fairly close together)
  6. Bake for 12-15 minutes.

Mounds

Ingredients:

  • 3 egg whites
  • 1/2 cup of sugar
  • 3 to 4 cups of coconut
  • 1 tsp of vanilla
  • 10 oz bag of Ghirardelli chocolate chips

Directions:

  1. Mix together the egg whites, sugar, coconut and vanilla
  2. Scoop them into little clumps onto a greased cookie pan
  3. Bake for 8 minutes at 400 degrees.
  4. Let them cool on the baking sheet for about 20 minutes.
  5. Microwave the chocolate chips for a minute. Stir it, and then microwave for another 30 to 45 seconds. Stir again
  6. Use a spoon to spread the chocolate on top of the coconut clumps.
