Tortilla Española

This dish is like a potato quiche, but with more potato than egg. There are only four ingredients: oil, egg, onion, and potato. The hardest part is flipping it. I used two pans, and flipped it into the bigger pan.

It’s boring, but it’s delicious, and it brings back memories of my trimester abroad in Spain. My host family’s domestic assistant, Cameron, made it frequently.

Puppy Chow / Muddy Buddies

Ingredients:

  • 1 cup of chocolate chips
  • 1 cup of peanut butter
  • 1 stick of butter (1/2 cup)
  • 1 box of Crispex breakfast cereal (chex taste sub-par for this recipe, IMO)
  • 3 cups of powdered sugar
  • a large container with a tight lid

Instructions:

  1. In the microwave, melt together the peanut butter, butter, and chocolate chips.
  2. Pour the Crispex into the large container, and pour the melted sauce on top.
  3. Mix it together with a large spoon so that the sauce covers all of the pieces
  4. Pour on the powdered sugar.
  5. Put the lid on the container, and shake it all around so that the powdered sugar covers all of the Crispex.

Eggplant Parmesan

Ingredients:

  •  2 large or 3 small eggplants
  • flour and cornmeal, or preferred breading
  • 2 eggs
  • Mozzarella cheese
  • Parmesan cheese
  • Tomato sauce (preferred – Prego traditional)
  • vegetable oil

Instructions:

  1. Preheat the oven to 350
  2. Skin the eggplant and slice it into quarter inch thick pieces
  3. In a bowl, crack the eggs and stir them
  4. In a second bowl, mix cornmeal with flour (1:1 ratio)
  5. In a pan on the stove, heat up oil that is about a quarter of an inch deep
  6. Dip each eggplant slice in the egg, then coat it in the cornmeal and flour mix.
  7. Place it in the oil until it is golden brown, being sure to flip it to get both sides.

8. In a large pan, coat the bottom with a single layer of eggplant. In order to fill in the spaces between eggplant slices, cut up a slice. Try to leave as few openings as possible.
9. Add a layer of sauce, spreading it around with the spoon.
10. Finally, add a layer of cheese. Sprinkle the mozzarella on first, and then add the Parmesan.
11. Repeat steps 8-10 so that you have two full layers.

12. Bake for 30-35 minutes and enjoy!

Ranger Cookies

  • 1 cup butter
  • 1 cup sugar
  • 1 cup brown sugar
  • 2 eggs
  • 2 tsp vanilla
  • 2 cups flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 2 cups oats
  • 1 cup coconut
  • 3 cups corn flakes

Instructions:

  1. Mix together the wet ingredients, and then add the dry ones. You may need to add a little less oatmeal and flour, because it can get thick and hard to stir.
  2. Bake at 350 for 10 minutes.
  3. Don’t eat all the dough!!!
