Ingredients:
- 2 cups flour
- 2 cups sugar
- 1 tsp baking soda
- 1 tsp salt
- 1 tsp cinnamon
- 1 cup vegetable oil
- 4 eggs
- 1 tsp vanilla
- 1/2 cup milk
- 1/2 cup apple sauce
- 1 cup coconut
- 4 cups grated carrots
Steps:
- Preheat the oven to 350
- Sift together sugar, baking soda, flour, salt, and cinnamon
- Add oil, eggs, vanilla, milk, and apple sauce
- Add carrots and coconut
- Bake for 40-45 minutes in a greased 9″ x 13″ pan or two round 9″ pans
- Frost with cream cheese icing of your choice
